Brisket, Two Ways: Part 2

At long last, I FINALLY have the opportunity to sit down and blog about the second way to eat your brisket. My last post was 10/24 and today it is 11/13. The last several weeks have been wrought with very trying times in class. Projects and tests are practically coming out my years. This has been perhaps the LONGEST semester of my college career. I have never wanted school to be over so badly. The worst part is that even though I will be done with every degree I need in May, I will still need to study, because I have the stupid CPA exam. *Sigh* I can't wait for this part of my life to be over. I'm ready to just work.

Anyway, on Tuesday I get yet another project, and tomorrow I have ample studying to do, so I thought that at this late hour (10:40 PM), I would take this scarce and brief opportunity to expose you to the absolute delight that is Brisket Tacos.

Despite offering cookies, only ONE person took a stab at what the second way was. I don't understand you people. A simple guess with the possibility of COOKIES attached to it! Why wouldn't someone guess for that? I would guess for one cookie, let alone a whole batch... Y'all are weird. ;)

Brisket, Two Ways: Part 1



This weekend, I took a shot at one of my favorite Texas meals. Barbecue is one of my absolute favorite things to eat. It's right up there with steak, fajitas, chicken fried steak, and sweets of all kinds. It is something that absolutely must be mastered before I leave Texas in less than year. For my friends in Tennessee, this is a totally different type of barbecue than you are used to. That is not pork you see in that picture. It is beef brisket. And you cannot judge brisket by what you find at the barbecue restaurants in Tennessee. It is simply NOT the same.

Chocolate Strawberry Cake


This is my first ever attempt at decorating a cake. It's definitely not perfect, but as first tries go, I think it turned out pretty good! I asked Drew for cake decorating supplies for my birthday. So, on my birthday, I printed out some coupons, and Drew took me to Michaels. It was VERY exciting!

Chili, Salsa, and Cornbread

First, I'm terribly sorry for the long, long time since my last post. There have been lots of tests going on the last couple weeks. I have been doing lots of cooking, though, and I've taken pictures of all of it, so as  soon as I have time to write them all up, I have lots to share! This week, I even baked and decorated an AWESOME chocolate cake.

A few weekends ago, Drew and I had some friends over, and I was craving salsa, so we decided to have chili, cornbread, and chips and salsa. Drew kinda cheats when there are chips and salsa available. This salsa is totally addicting, though. So, you can't blame him.

Low Carb Peanut Butter Cream Cheese Cookies

Drew has been eating these double chocolate chunk Atkins cookies. He remains convinced that they are delicious. I firmly believe that these double chocolate chunk cookies taste like card board, and I'm pretty sure that I've never disliked a cookie before. Needless to say, I need to stop him from eating that gross card board crap.

Peanut Butter Cheerio Bars

Cheerio Bars are one of my favorite things to grab on my way out the door in the mornings. It's fast and easy, and if they contain peanut butter, they hold me over until I can get lunch. The cheerio bars from the store don't really hold me, though.

My mom makes her own peanut butter cheerios, and she was kind enough to pass the recipe on to me. :)

Chicken Fettuccine Alfredo

As promised, here is the recipe for the chicken fettuccine alfredo that Emily and I prepared.

Unfortunately, I am lacking a picture of the final product, as a boy being stupid caused me to forget. (Aren't boys always the problem? Let's just blame everything wrong in the world on boys, okay? Okay.)



Then, on top of that, my camera randomly deleted the chicken pictures!!! What in the world are we going to do with the stupid boys?

Dr. Pepper Cupcakes

Emily, one of my best friends, was celebrating another friend's birthday this week. Emily doesn't really cook or bake much, but she desperately wanted to prepare Dr. Pepper Cupcakes and Chicken Fettuccine Alfredo for her friend's birthday. I'm going to put this in two separate posts so that the cupcakes and the meal each have their own recipe, and since I'm waaaay more excited about the cupcakes, I'm going to show you them first.

The Beginning

I should start at the beginning.

My name is Courtney, and I have a slight baking addiction. But only when I'm stressed!
Seriously!

The problem with me is that I LOVE sugar. If it's a dessert, I will eat it. There is nothing I love more than a good cookie. Except a cake. Or a pie. Or a cheesecake... Or a blondie a la mode.... I love blondies.

I also love carbs. Cornbread. Pasta. Baked potatoes, mashed potatoes, baked potato casserole. You get the idea.

The real problem here isn't me, though.
